Job Description

Purpose of Position: Create an exceptional culinary experience for guests through preparation and presentation of hotel menu items

Essential functions:

  • Complete opening duties: a) Set up station with required tools, equipment and supplies; b) inspect the cleanliness and working condition of all tools, equipment an supplies; c) Check production schedule and pars; d) Establish priority items for the day; e) Inform Sous Chef or Chef of any supplies that need to be requisitioned for day’s tasks; f) Transport supplies from the storeroom and stock in designated areas
  • Organize all of the various prep items needed from different areas to ensure that all items are in place and ready for use
  • Start prep work on items needed for the menu of the day
  • Inform Sous Chef or Chef of any shortages before the item runs out
  • Inform F&B service staff of all 86’d items and amount of available menu specials throughout the meal period
  • Communicate any assistance needed during busy periods to the Sous Chef to ensure optimum service to guests
  • Restock items as needed throughout shift
  • Check the quality of raw or cooked food products to ensure that standards are met
  • Prepare and cook food of all types, either on a regular basis or for special guests or functions in a sanitary and timely manner
  • Follow established recipes, portion controls and presentation specifications as set by the chef and the hotel standards
  • Responsible for the correct food presentation of each plated item
  • Properly label and store food in designated containers and areas of kitchen; maintain proper storage procedures as specified by Health Department and hotel requirements
  • Practice good safety, sanitation, organizational skills
  • Assist with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas
  • Inform supervisor of any kitchen machinery that is not working properly
  • Meet with Head Cook/Sous Chef to review assignments, anticipated business levels, changes and other information pertinent to job performance
  • Closing Duties:  a) Return all food items to the proper storage areas; b) wrap, cover, label and date all items being put away; c) Straighten up and organize all storage areas; d) Clean up and wipe down food prep areas, reach-ins, walks-ins, shelves; e) Return all unused and clean utensils/equipment to the specified locations; f) Turn off all equipment not needed for the next shift
  • Maintain and strictly abide by State sanitation/Health regulations and hotel requirements

May perform other duties as assigned

Job Requirements

Education and Experience:

  • High school graduate or General Education Degree (GED); or work equivalent
  • Experience with food preparation and handling required
  • Certification of Culinary training or apprenticeship is preferred

Physical Requirements:

  • Must be able to stand and exert well-paced mobility for up to 8-hour shift
  • Ability to move about, lift, carry, bend, stoop, walk, stand for extended periods of time

Mental and Other Requirements

  • Ability to perform job functions with attention to detail, speed and accuracy; prioritize and organize; follow directions thoroughly; work cohesively with co-workers as part of a team; work with minimal supervision
  • Employees must at all times be attentive, friendly, helpful and courteous to all guests, managers and all other employees
  • Ability to hear, speak and comprehend the English language sufficient to understand and communicate with managers, co-workers and guests
  • Ability to read and properly interpret abbreviations on food order tickets
  • Must be dependable and flexible to work various shifts, weekends, weekdays, holidays
  • Must possess thorough knowledge of all food preparation techniques, styles, sanitation and food handling procedures.
  • Must possess commitment to excellence and high standards
  • Maintain high standards of personal appearance and grooming which includes wearing the proper uniform and name tag when working (per brand standards)
  • Learn and know Hyatt brand standards
